Yesterday was Mike’s and my three year anniversary. My mom always says “you can’t celebrate dating anniversaries” but I think three years is a pretty big deal! I mean, we were sophomores in college when it all began, on a cold winter night at Fiji valentine formal (aka frat party in a basement - romantic right??)…
I have to say, it’s a great time of year to be celebrating an anniversary. Love is in the air! We had originally planned to go out for fondue at Grendel’s Den in Harvard Square, but the supposed “Snowpocolypse 2010″ put a wrench in our plans. We decided to make dinner for ourselves and stay cozy inside, which ended up being a little silly because it didn’t snow. BUT, boy am I glad we made our own fondue. It was: to. die. for.

Red velvet cupcakes, round two. THIS time with homemade cream cheese frosting:

2 1/3 cups powdered sugar, sifted
3 Tablespoons butter, room temperature
4 ounces cream cheese
scant 1/4 teaspoon ground cinnamon
Beat the powdered sugar, cinnamon, and butter together in the bowl of a stand mixer fit with a paddle attachment. Mix on medium-slow speed until it comes together and is well mixed.
Add the cream cheese all at once and beat on medium to medium-high until incorporated.
Turn the mixer to medium-high and beat for 5 minutes, or until the frosting becomes light and fluffy.
