I believe coconut was put on this earth to be toasted.
Just…look at it. When I look at this little pile of magnificent toasted shreds I hear the Little Mermaid singing. You know the part where Ursula is stealing Ariel’s voice and she says “KEEP SINGING!” and then at the end she gets it back and Eric falls in love with her?
AaaaAAAaaahhhhhahhhh aAAAaaaAAhhhhhhh. No? Yes?
I digress.
But you should definitely toast up some coconut and mix it with flour and butter and heavy cream and make these scones. Because they are phenomenal and you just might hear the Little Mermaid too.
Mix together 2 cups flour, 1/2 cup sugar, 1 teaspoon baking powder, 1/4 teaspoon salt, and 1/4 teaspoon baking soda. Cut in 1/2 cup (1 stick) of cold butter.
If you don’t already have one, invest in a pastry cutter. They make life a WHOLE lot easier and I found mine at a flea market for THREE DOLLARS!
Add 1/2 cup toasted coconut and 1 cup heavy cream.
(I halved the recipe so I wouldn’t accidentally eat all the scones and feel bad about the 2 sticks of butter pumping through my veins)
Mix in the heavy cream with your hands, then knead the dough 3 or 4 times until it just comes together. Put it in a round cake pan and bake at 400 degrees for 20-25 minutes, or until just golden brown. Cut in triangles and enjoy!
